Ingredients

  1. 1 cup Quinoa
  2. 1 cup stock
  3. 2-4 Tomatoes of choice
  4. 1 cup shredded cheese
  5. 1/2 cup shredded zucchini

Intructions

Prepare Quinoa to package instructions (replace water with stock for flavour) Hollow out tomatoes, dice the insides into chunks Salt the inside of the tomatoes and place upside down on a plate to draw out water and drain Mix prepared quinoa with shredded cheese, zucchini, and diced tomato scraps Stuff tomato with quinoa mixture, score the tomato skin Bake at 350F 20-25 minutes until the tomato is tender
