Citrus Tofu Sticky Rice

Ingredients
- 300g firm tofu
- 1 medium sweet potato cubed
- 1 lime
- Chili powder
- Caynne pepper
- Cumin
- Corriander
- Salt
- Pepper
- 1 can well shaken coconut milk
- 50 ml water
- 3/4 cup white rice
- 1tbsp sugar
- Optional: Fresh parsley
Intructions
Drain and press the block of tofu in a kitchen towel to soak excess Cut tofu into cubes
In 2tbsp of oil mix chili spices together Marinate the tofu in the chili oil mix
Coat sweet potatoes in oil, salt and pepper
400F for 20-25 mins roast tofu and sweet potato
Rinse rice clear Then add to pot with the coconut milk and water Bring to a boil, reduce to a simmer Give about 20 minutes to absorb liquid Add sugar when removing from the heat
Plate rice Pile on potato and tofu Zest and juice the lime over top Optional Garnish with fresh parsley
