Low FODMAP Pad Thai

Ingredients
- 4 tbsp - 1 cup tamarind paste (how concentrated is yours)
- 2 tbsp soya sauce
- 2 tbsp fish sauce
- 2 tbsp rice wine vinegar
- 2 tbsp ginger paste
- 1 tbsp sriracha
- 1 tbsp lime juice
- 1 tbsp cilantro paste
- 4 oz rice noodles
- 1 block firm tofu
- 2 lg egg (or 4 no meat)
- optional: 1 chicken breast
- 2 carrots, cut match sticks
- 1 zucchini, cut match sticks
- 1 red pepper, cut match sticks
- 1 bag bean sprouts
Intructions
Pre drain, press and cube tofu Have everything prepped and ready to throw in the pan (mis enplace) Soften noodles by package instructions Fry chicken Fry Tofu Scramble Egg Add Vegetables, fry until el-dente Add sauce and noodles, reduce the sauce Add bean sprouts, cook just until soft
Optional Garnishes: fresh cilantro fried peanuts fresh lime juice
